Distillation in Ireland is recorded as early as 1324 (Red Book of Ossory). Irish whiskey must be distilled and matured >=3 years on the island. Distilleries collapsed from 28 (1887) to two (1970s) before a strong modern revival. Style: smooth, subtle, elegant.
